The national beverage of Japan enjoyed since the 8th century is a fermented rice beverage, typically referred to as a rice wine. It is brewed using highly polished sake mai rice, water, a mold called Aspergillus oryzae (used in soy sauce) & yeast, most variations are between 15% – 20% alcohol.
